Mexican Turkey Wraps!

Hey guys!  Quick/easy/versatile recipe idea for today!  There are endless ways you could make a wrap, today I went for a mexican/taco version.  For mine I used ground turkey, black beans, tomatoes, peppers, onions, lettuce, cheese, salsa, and some chipotle dressing. 




I diced up my veggies and froze what I didn't use, so that I could use it later for other recipes. 



I browned my turkey and onion in a skillet. 


Towards the end I threw in my peppers just to slightly heat them basically. I like for my veggies to still have a bite to them, I do not cook them till they're mushy. 


For convenience sake I threw everything together (with the heat off).  Tomatoes, beans, etc. 


I added a pinch of kosher salt...


...and some fresh black pepper. 


I first laid out my wrap and some leaf lettuce


Then I layered on some of my meat mixture, followed by a sprinkle of cheese and some taco sauce. Wrap it up and slice it on an angle and you are done!  (I forgot to take a pic of the finished wrap...oops!)  


If you are not into wraps you could always enjoy this same meal on a bed of mixed greens or lettuce. Super delish that way as well!
